Where to try it: Capiz

A local delicacy of President Roxas, Capiz and neighboring towns, Puyoy are types of eel that are locally abundant. These snake-like creatures are skewered on a stick and grilled over charcoal. From afar they resemble isaw, but look closely and you can see their tiny gaping faces and mouths wide open. The taste is distinctly fishy and slimy but there’s hardly any meat on these barbecued treats. You can hear and feel all the tiny bones crunching as you chew. Yum!
