Betute or “Stuffed Frog” is an exotic specialty of Pampanga of deep-fried rice field frogs filled with minced pork. “Tugak” literally means frog while “Betute” is derived from Butete, which refers to a “Tadpole”. The dish preserves the shape of a bloated or fat frog with the stuffing and other herbs and spices. The taste of frog meat is very similar to chicken and this dish is actually pretty good if you don’t think about its origins too much.
