Apartment Door 1’s Pure Beef Cheeseburger with Etag had me at etag. What is etag, you ask? It’s smoked meat from the Igorot of Sagada. Some call this as Igorot ham. It’s pork that’s generously rubbed with salt before it’s cured and sun-dried or put in the steady smoke from dried birch or redwood for a few days. It’s as ancient as it’s delicious.
